So here's how this started... after many years of doctors and "women problems" I now know the name of the condition that has drove me nuts and made me sick.. it's called PCOS... or in my words I like to call it Piece of s*** ovaries! Its polycistic ovary syndrom... it's annoying and makes you insulin resistant and causes fertility problems, along with extreme hormone imbalance and weight gain and all the fun stuff. The last few months it's just caused me pain, sickness and anxiety attacks. Luckily I have now found a great doctor that is treating me and everything is on the right track. I'll be spending time getting healthy, mind and body! I just finished a lovely round of hormone pills that about sent me to the mental ward.... haha... but now those are done and I take gluphonage...a diabetic medicine that makes me a bit queezy and tired for now but also helps your ovaries do what they need to do... so life is back on track.... I even did something crazy this morning.... hit the gym!! So we are on a new path of life... being healthy and am now in a grey zone for my blood sugar so the type 2 diabetes has actually not hit quite yet.. but I will still be exploring low carb foods including fun filled family desserts just as promised :)
SOO...... for my first new recipe for all of you out there... I (kind of accidently) came up with a new dessert last night to share with all of you! I fumbled upon making sugar free custard.... the 3 minute version and it was delicious!! So my recipe for you i call
No Guilt Custard Pies
one package of phyllo shells.. keep col
one box of sugar free vanilla pudding
1 1/2 cups of half and half
1 cup of unsweetened carob chips (look like chocolate chips but supposed to be healthier )
melt the carob chips with a capful of veg oil in microwave 30 seconds at a time until melted
pour into bottom of mini phyllo cups
let firm in fridge
meanwhile mix sugar free pudding with 1 1/2 cups of half and half and whip together (this forms custard.. and its so yummy!)
then pour into each cup on top of melted carob chips and let stand 10 minutes in fridge
EAT and ENJOY
yummy for the whole family.... enjoyed by all the boys and men in my house... actually they were all gone by this afternoon..... don't tell them how healthy they were haha!
As for tonights dinner... a low cost and low carb meal for all
Beef and Broccoli... my low cost tip for this meal...... clearance meat section.... stew meat.... thats right one whole pound for under $3 (30 % off sticker ) plus a pound of broccoli...... for the unhealthier eaters in my home i quickly cooked up 2 pkg's of oriental ramen noodles for them to put under they're beef and broccoli and in about 15 minutes I successfully filled up a family of 4 for under $7!!!!!!
